One of my favorite breakfast items from McDonald’s is a McGriddle sandwich. The syrup-filled pancake “buns” balance the salty sausage and soft eggs. It’s a super tasty breakfast item that is typically my go-to if I run through the drive-thru on busy mornings. I’ve always wanted to try to recreate it at home and this recipe for McGriddle bites has the sweet and savory flavors in a tiny poppable form that’s perfect for on the go. Plus, it’s super kid-friendly! My kiddos love breakfast food and they love bite-sized food even more.

What You’ll Need

This quick and easy breakfast only needs 5 ingredients. It’s great for a tight budget!

  • Pancake mix: Buy your favorite complete mix or make it homemade pancake mix.
  • Water: Instead of preparing the pancake mix according to the directions, add the amount of water listed in this recipe.
  • Cheese: I use shredded cheddar cheese but you can use any type of cheese you prefer.
  • Maple syrup: Use pure maple syrup for authentic flavor or any brand of breakfast syrup.
  • Breakfast sausage: I use plain ground breakfast sausage. Feel free to substitute maple for sweetness or hot for a kick.

How to Make McGriddle Bites

Here are the super easy step-by-step directions on how to make these copycat McDonald’s breakfast sausage bites.

  • Prepare the oven and muffin tin. Preheat the oven to 400 degrees F and grease your muffin tin or line it with paper liners. 
  • Brown the sausage. Heat a skillet over medium heat and cook the sausage until no longer pink. Drain the fat and set it aside.
  • Combine remaining ingredients. Add the rest of the ingredients to a large bowl and mix until well combined.
  • Add sausage. Stir in the crumbled sausage.
  • Scoop the batter. Fill each cavity of the muffin pan with the sausage McGriddle batter.
  • Bake. Place in the oven and bake for 12-15 minutes or until the edges or golden and the batter is set and fully cooked.
  • Serve. Drizzle with extra syrup and enjoy!

Tips and Variations

  • Swap the meat. Use chopped bacon or ham in place of the breakfast sausage.
  • Cool before freezing. Be sure to cool the McGriddle bites before placing them into the freezer to preserve their texture.
  • Use a toothpick. If you aren’t sure if they are fully baked, insert a toothpick into the center of one of the sausage bites. If it comes out clean, they’re ready.

Storage Directions

  • Refrigerate: Store these McGriddle bites in an airtight container in the refrigerator for up to 4 days. 
  • Reheat: Place them on a microwave plate and heat for about 30-40 seconds. If reheating from frozen, heat for 1-1 ½ minutes.
  • Freeze: Store in a freezer-safe bag for up to 3 months.

McGriddle Bites

These McGriddle Bites are the perfect breakfast!! They taste just like a McGriddle but in a little poppable bite-size. These little bites combine pancake mix, syrup, cheese, and sausage to create the absolute perfect breakfast bite. You get your sweet and savory all in one little mouthful. Make these at the beginning of the week and have an easy breakfast all week long.
Servings: 48 Bites
Prep: 10 minutes
Cook: 20 minutes
Total: 30 minutes

Ingredients
  

  • 2 cups complete pancake mix
  • 1 1/2 cups of water
  • 1 cup cheddar cheese shredded
  • 1/4 cup maple syrup
  • 1 pound breakfast sausage

Instructions

  • Preheat your oven to 400 degrees.
  • In a medium frying pan over medium high heat brown and crumble your breakfast sausage.
  • Once your sausage is cooked through, drain and set aside.
  • To a large mixing bowl whisk together your pancake mix, water, cheese and syrup until well combined.
  • Stir in the cooked sausage.
  • Spoon your batter into mini muffin tins. I use silicone but if using metal either spray your mini muffin tin or line with paper liners.
  • Bake at 400 degrees for 12-15 minutes until golden and cooked through.
